Bacon Chocolate Chip Protein Pancakes

Ingredients

  • 1/2 Cup (75g) Kodiak Cake Buttermilk Pancake Mix

  • 2 Pieces Hickory Smoked Bacon

  • 1 TBS (15g) Hersheys Dark Chocolate Chips

  • 1/4 Cup FairLife 2% Milk

  • 1/3 Cup Egg Whites

  • Olive Oil Spray

  • 1/4 Cup Great Value Sugar Free Pancake Syrup (or a smidge more 😉)


Instructions

  1. Start by cooking your bacon. Once the entire pack is cooked take 2 pieces and chop it up. Set aside.

  2. Measure out 1 TBS (15g) of chocolate chips. Set aside.

  3. In a mixing bowl, add in 1/2 cup (75g) of Kodiak Cake Pancake mix, 1/4 cup milk, 1/3 cup of egg whites and stir.

  4. Preheat your griddle to medium.

  5. Once your griddle is hot, lightly spray with olive oil spray.

  6. Pour your pancake mix on to the griddle to form whatever size pancakes you desire - I typically make 4 large pancakes.

  7. Sprinkle the pancakes with the chopped bacon and 1 TBS of chocolate chips.

  8. Once the pancakes have little bubbles on the top, flip them and let them cook the rest of the way through.

  9. You should end up with 4-6 pancakes depending on the size you made them.

  10. Remove from the griddle and top with 1/4 cup sugar free syrup.

  11. Enjoy!

Pro Tips

  1. This recipe also makes great waffles!

  2. The decorative bacon on top of the pancakes and the milk shown in the picture are not included in the calculated nutrition facts!

  3. I provided the recipe for one serving so that the consistency was right, but feel free to double or triple the recipe. Getting a box of mix and 12oz of bacon should give you at least 6 servings of this.

  4. Adding more syrup or using a different syrup will change the macros on this dish. Be sure to account for this if you are tracking!

  5. If you are looking to boost the protein and don’t mind a thinner batter, you can bump this up to 1/2 cup of egg whites. It will make it more like a crepe texture, but it’s still delish!

  6. Be sure to check the calories in your chocolate chips! Different brands and different types of chocolate (milk, semisweet sweet, etc) will have different caloric values.
