Macro Meatloaf

This recipe makes at least 8 servings of meatloaf!

Ingredients

For the Meatloaf

  • 2 LBS 93% Lean Ground Beef

  • 1 Cup Rolled Oats

  • 1/2 Cup Yellow Onion, Finely Diced

  • 1/2 Cup Fairlife 2% Milk (this recipe also works with almond milk!)

  • 1 Whole Egg

  • 1/2 tsp Salt

  • 1/4 tsp Pepper


For the Glaze

  • 1/3 Cup Ketchup

  • 2 TBS Brown Sugar

  • 1 TBS Yellow Mustard


For the Sides

  • 1.5 Pounds Fresh Green Beans (or 2 - 12oz bags frozen)

  • 1 - 24oz Bag Gold Baby Potatoes

  • 2 TBS Avocado or Olive Oil

  • Olive Oil Spray

  • 1/2 tsp Garlic Powder

  • 1/2 tsp Onion Powder

  • 1 tsp Salt, Divided

  • Cracked Black Pepper


Instructions

  1. Preheat your oven to 350°.

  2. Finely dice 1/2 cup of yellow onion.

  3. In a large bowl, gently mix 2 LBS of ground beef, 1/2 cup diced onion, 1 cup rolled oats, 1/2 tsp salt, 1/4 tsp pepper, 1 whole egg, and 1/2 cup of milk.

  4. Once the ingredients are fully incorporated, transfer the meat mixture into a rectangular meatloaf/bread pan.

  5. In a clean bowl, mix together 1/3 cup ketchup, 2 TBS brown sugar, and 1 TBS yellow mustard. Top the meatloaf with the glaze.

  6. Place the meatloaf in the oven for 1 hour and 20 minutes or until the center reads 165°.

  7. About 30-40 minutes before the meatloaf is finished, begin prepping your veggies.

  8. Rinse your green beans thoroughly and trim off the ends (if needed).

  9. Line a baking sheet with the green beans and generously spray with olive oil and sprinkle with 1/2 tsp garlic powder, 1/2 tsp onion powder, and 1/2 tsp salt. Set aside.

  10. If you are making the entire bag of potatoes, wash and chop them into small bite sized pieces (see photo for reference). Place in your air fryer basket and drizzle with 2 TBS avocado/olive oil and season with 1/2 tsp salt and a few cracks of pepper. Toss well.

    **If you prefer to have fresh potatoes with each serving of meatloaf instead of leftovers, refer to the Pro Tips section and then proceed with step 12.**

  11. Place the potatoes in the air fryer at 400° and cook for 18-20 minutes, tossing frequently.

    **You will know they are done when they are golden and can be easily punctured with a fork.**

  12. When there are 15 minutes left on the meatloaf, bump up the temperature up to 375°and place the green beans in the oven. Cook for about 15-20 minutes or until golden and crispy!

  13. Once the meatloaf is to temperature, remove it from the oven and allow it to cool for 5 minutes.

  14. Once slightly cooled, cut the meatloaf into 8 equal slices.

  15. Plate 1 piece of meatloaf, 1/2 cup of cooked potatoes, and about 1 cup of roasted green beans.

  16. Feel free to top with additional ketchup and enjoy!

Pro Tips

-You can absolutely cook all of the potatoes at once so that you have leftovers; however, they are best made fresh! If you choose to make them fresh follow these instructions and then pick back up with step 12: Chop 1/2 cup of potatoes and drizzle with 1 tsp of oil per person you are serving. Then lightly sprinkle with about 1/8 tsp of salt. 

(i.e. if you are serving 2 people, you would chop 1 cup of potatoes and use 2 teaspoons of oil!)


-This recipe is AMAZING with fresh green beans, but frozen are great too! They don't tend to get as crispy, but they are still delicious! You can cook them straight from frozen following the same instructions!


-If you have a dual basket air fryer, you can totally cook your green beans at the same time as your potatoes and skip the oven! If you do this, don’t bump the oven temp on the meatloaf!

-If you only eat 1 slice of meatloaf per serving, you will definitely need all of the green beans. But if you or someone else in your household eats more than 1 piece, you may only need 1/2 of what the recipe calls for!


-Skip the hassle of roasted potatoes and grab some boxed mashed! Ain't no shame!


-This meatloaf is delicious left over on a sandwich! You can't beat Dave's killer bread, light mayo, and bread and butter pickles!
